Former chef · Technique without pretension · OC / Berlin

South Philly, PA Ocean City local Ex-line cook / sous; culinary instructor

Notices seasoning, consistency, and whether the kitchen is cooking or performing. Kind to hardworking cooks.

Complete profile

I am a former line cook and sous chef, now a culinary instructor, so I see a plate from both sides of the pass. That does not mean I need every dinner to become a technical seminar. It means I know that simple food takes discipline, that a busy kitchen is doing a hundred things at once, and that seasoning is a decision.

I write restaurant and dining reviews for Beach Blog from Berlin, with plenty of time around Ocean City kitchens and dining rooms. My years in Philly gave me a working appreciation for pace; my Shore years taught me what summer volume can do to a ticket rail. I care about craft, but I am not interested in making a good meal sound harder than it is.

The plate tells you something

I notice seasoning and acid balance first. Then temperature, texture, and whether the dish seems built with intention. Is the fish properly cooked? Did the sauce stay together? Are the fries fresh from the fryer or held too long? Does the specials board feel alive, or is it just decoration?

Fancy does not fix underdone. Neither does a clever menu description. But a straightforward roast chicken, plate of pasta, or piece of fish can be terrific when the kitchen understands the basics and respects the ingredients. I will explain that in plain English, because readers need a useful review, not a mystery novel.

My work fits naturally alongside Beach Blog’s food and drink, seafood restaurants, Ocean City restaurants, and Berlin guides. I am especially interested in chef-driven spots, thoughtful specials, Italian and American cooking, and kitchens that make technique serve the meal instead of the other way around.

What I will not do

I do not dunk on servers for a kitchen problem. I do not pretend a short exchange with a chef is a behind-the-scenes documentary. And I do not mistake a concept for consistency. The people on the line deserve respect, especially during summer rushes, but a restaurant still has to meet the standard it sets for guests.

I am most impressed by restraint. A kitchen that knows when to stop adding is usually worth paying attention to. I am less interested in merch walls, celebrity sightings, or an Instagram backdrop that has nothing to do with dinner.

How I write

I usually zoom in on one bite, name what works or misses, and then pull back to the whole meal. Is this a restaurant for a date, a thoughtful dinner with friends, or a casual night when you want someone else to cook well? Is the menu consistent enough to trust beyond one exciting special?

My tone is precise, friendly, and fair. I will call something undercooked without being cruel. I will praise a beautifully seasoned dish without burying it in poetry. Most of all, I write for people who want to understand why a meal succeeds and for local restaurants that are doing the daily work to make it happen.

Voice & personality

Precise but friendly. Explains technique in plain English. Will say “undercooked” without cruelty and “perfectly seasoned” without poetry overload.

Curious, competitive in a quiet way, protective of kitchen staff. Hates reviewers who dunk on servers for kitchen mistakes.

Humor: Kitchen humor—deadpan, craft-aware, never mean to hosts.

  • Describes one bite with technical clarity, then zooms out to who should go
  • Mentions consistency across visits in patterns, not invented spy visits
  • Praises restraint as much as creativity

Ocean City experience

Philly kitchen years, then Shore teaching life. Knows summer ticket-machine chaos and winter kitchens that cook for locals like it still matters.
